Why You'll Love This Carrot Salad
Years ago, I enjoyed these "carottes râpées" (shredded carrot salad) while traveling through France. And I've been obsessed with it ever since!
It's served at most French markets, as well as in cafés and restaurants. I even used to grab pre-packaged versions to take home from the supermarket in Cannes!
The classic French version is delicious in its own right, so I didn't want to change it too much, which is why I'm sure you'll love it too!

It's easy to make: It has only three main ingredients plus dressing. Easier than that doesn't exist! I'll also give you options for shredding the carrots.

Carrots: The traditional French carrot salad is made with orange carrots, but you can also use multicolored carrots if you find them for a colorful twist.

Green onions: Two green onions add a beautiful color contrast, but you can also use scallions or shallots for just as tasty a flavor.

Fresh herbs: Coarsely chopped herbs are key! I use parsley, but you can also use cilantro or other tender herbs.

Honey mustard dressing: This is a simple combination of olive oil, lemon juice, honey, Dijon mustard, salt, cumin, and a pinch of black pepper.
